German Ryebread

is added. Knead for ca. 15 min to get a rather moist dough.
Form a ball and cover with flour in order so that it does not stick to the bowl. Let it rest for about an hour at a warm place, covered with a kitchen towel.
Heat oven to 250° Celsius, put in a cup with water.
Form a bread from the dough and cut in crosswise: That prevents the bread to crack open at other places.
Bake for 15 min, reduce heat to 175° Celsius and bake for another 35 min.
When the bread is ready, it should sound hollow when you knock on it. Put on a grate to cool out.

Instead of rye flour you can also use any other flour. Just make sure you have at least 300g of wheat flour, otherwise it easily crumbles and does not rise properly. Instead of ready-made bread condiment you might as well use ground caraway, fennel, coriander, anise or cardamom. And of course you can create all sorts of delicious breads adding ingredients such as fried onions, nuts, bacon, berries, olives, dried tomatoes or herbs.
